| Risalamanden juleaften er en fast tradition, som hvert år kræver mange indlæggelser.
I juleugen sælges der syv gange mere fløde end normalt. Det er dog ikke videnskabeligt bevist, at der er sammenhæng mellem de mange indlæggelser juleaften og risalamanden. Forskning dokumenterer dog, at den transfedt, som findes i mælk, er en meget stor faktor i forhold til blodpropper i hjertet. Det er det mættede fedt i fløden, der er så farligt, at der i 2004 blev indført en lov, der maksimalt tillader 2 pct. transfedt i en fødevare. Eneste undtagelse er mælkeprodukter, for her er transfedtet jo naturligt. Man kan med fordel koge risengrøden til risalamanden på vand. Så brænder den ikke på selvom man ikke står og rører konstant. Brug en smule mindre vand end den mængde mælk, der er opgivet i opskriften. Som fløde-erstatning kan man bruge sojafløde – eventuelt tilsat lidt citronsaft, hvis sukker, vanilje og de hakkede mandler ikke fjerner hele “soja-smagen”.
